Nestled in the lush mountains of Santa Barbara, Antioquia, Colombia, the La Ventolera farm is where the magic of Flaming Peaches begins. Here, the Yellow Colombia and Caturra varieties thrive, their cherries ripening under the care of skilled producers. This lot was personally selected by our founder, Eric Resch, during his visit to the farm last November. Captivated by its unique character and the dedication of Felipe Trujillo and his team, Eric knew this coffee was something special—a reflection of the artistry and passion behind high-altitude cultivation.

The journey of Flaming Peaches is rooted in innovation and precision. Felipe Trujillo and his team embraced a challenge: to create a coffee with a standout flavor profile. They achieved this through malolactic fermentation, a process that unlocked a captivating aroma of stone fruits, with a distinct peach-like profile that enchanted everyone who tasted it.

THE METICULOUS PROCESS

Cherries are handpicked and undergo density separation to ensure optimal quality and bacterial cleansing. A precise selection of 70% ripe, 20% overripe, and 10% half-ripe cherries (red in color) sets the stage for its complex flavor profile. After 12 hours of fermentation, the cherries are depulped and placed in sealed stainless steel fermenters for one week, where anaerobic processes and malolactic fermentation work their magic. Following 72 hours of fermentation, the coffee is sun-dried for 2-3 weeks until the moisture content drops below 11%. Finally, the beans are stored in GrainPro bags with parchment for at least two weeks before milling and exportation, ensuring the flavors are preserved at their peak.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
