We are thrilled to introduce Midnight Honey Costa Rica, a new addition to our coffee lineup. Coming to us from the San Jose Province of Costa Rica, this exceptional coffee is grown at 1300 meters above sea level on the renowned Las Lajas farm.
The Chacón family are third-generation coffee farmers and have a rich tradition of coffee farming on their land. The name Las Lajas originates from the Spanish version of an Arabic word referring to indigenous-crafted stone artifacts that were found on the farm. The 38-hectare farm is divided into several parcels, each with various shade tree species and unique micro-climates, allowing for diverse coffee processing methods, including natural, honey, and washed. The Chacón family has cultivated coffee for over 80 years, continuously pushing the boundaries of coffee processing. Their commitment to sustainability and quality has earned them a reputation for producing wild and juicy naturals as well as complex and rich honey-processed coffees.
Midnight Honey Costa Rica underwent a black honey processing method, which involves leaving an increased amount of mucilage (or honey) on the coffee cherry during processing. This diligent process allows the bean to absorb more of the sweet flavors from the fruit, resulting in a vibrant and fruity cup. Due to the intensive monitoring required, black honey processed coffees have a higher potential for freshness loss, so it’s crucial to roast the green coffee promptly to capture its sweet honey flavors.
