CARE & SUSTAINABILITY

Luis Alejandro Ortega Guerrero, a second-generation coffee producer from San Agustín, Huila, Colombia, is the heart and soul behind Finca La Cabaña. At 55, Luis continues his father’s legacy, working alongside five of his seven siblings to cultivate exceptional coffee. Together with his wife, Marta Jenny Bolaños, and their two sons—both engineering students—Luis has transformed the 11-hectare farm into a model of sustainable farming. Eight hectares are dedicated to coffee, growing varieties such as Caturra, Castillo, Bourbon, and Geisha, while 1.5 hectares of natural forest preserve biodiversity with Guadua bamboo, native trees, and a natural spring. Luis’s coffee is celebrated worldwide for its exceptional quality and deep ties to the land, even served at the iconic Noma—a restaurant known for its dedication to heirloom ingredients and respect for nature.

PASSION FOR THE CRAFT

Situated at 1,750 meters in La Estrella, Finca La Cabaña’s gently sloping terrain and ideal microclimate ensure perfectly ripened cherries. This microlot was handpicked at peak ripeness, depulped, dry-fermented for 24 hours, washed by hand, and then dried for 30 days on parabolic dryers and raised beds. The result is a vibrant, juicy cup with notes of green mango and macadamia nuts, reflecting Luis’s meticulous craftsmanship. Our founder, Eric Resch, visited Finca La Cabaña and witnessed Luis’s passion firsthand. From agitating fermenting coffee with his iconic yellow shovel to sharing biodynamic farming practices, Luis’s dedication is evident in every sip of Papaya Nectar Colombia. This microlot showcases the artistry and care of a producer who truly embodies the spirit of Colombian coffee.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
