Then there’s Las Lajas, a farm run by the Chacón family, who have been working this land for three generations, pushing boundaries and rewriting the rules. Their 38-hectare farm is a patchwork of microclimates and towering shade trees, each parcel bringing something different to the cup. They’ve earned a reputation for coffees that hit wild and juicy, full of complexity and edge—because they don’t settle, and neither should you.

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
