For the third harvest in a row, we’re roasting this beautiful lot from Guji, and this is the freshest we’ve ever gotten it into Milwaukee. It landed in September, and it’s already showing us something new: more sweetness, more lift, more of that unmistakable Ethiopian character we love.

The first time we offered it, we roasted it both light and dark to see which direction you'd like best. You told us. Light won, so we listened.

This year, we’re keeping it a light roast, letting peach bring juicy acidity and sticky sweetness, while sugar magnolia and orange blossom layer in the kind of floral complexity that makes you want to keep coming back to the cup.

WE KEEP FINDING OUR WAY BACK TO SUKE QUTO

Ato Tesfaye Bekele had an idea: if coffee could help bring Guji’s forests back, maybe it could help its people thrive, too. After devastating bushfires, he left his government job, planted coffee himself, and built what became Suke Quto Farm. The farms that followed were, in part, inspired by his.

Today, Tesfaye works with 287 neighboring outgrowers, processing their cherries alongside coffee from his own farm. That story is part of why we pay attention to what comes out of Suke Quto, but the coffee still has to earn its way into our lineup.

We taste through these lots and choose the ones that make us stop, taste again, and start talking about them. This one did exactly that: sweet, floral, lively, and unmistakably Guji.

OUR APPROACH TO THE COFFEE

Kelly roasted this coffee light to let its sweet, bright fruit and delicate florals do the talking. Brew it as a pourover, and you’ll get a juicy, expressive cup with peach, orange blossom, and floral chamomile tea rounded out by honey-like sweetness. Prefer the drip brewer? Expect a little less floral character and more acidity, with bright, tart, tangy notes of gooseberry and apricot coming forward. However you brew it, give it a little time to settle in. This coffee is a killer on day 2 and really hits its stride around day 10, with peak freshness and flavor between days 3–14 off roast.

Whole Bean

Whole bean coffee is unprocessed and unground, preserving peak freshness and flavor until ground to the desired consistency for various brewing methods.

Espresso

Espresso grind is a fine, powdery grind with a texture like granulated sugar, crafted to create high-pressure extraction, resulting in a rich, concentrated shot with bold flavor and velvety crema.

Aeropress

Aeropress grind is a medium-fine to fine grind, similar to table salt or slightly finer, allowing for versatile brewing times and methods, resulting in a clean, rich, and full-flavored cup.

Cone Filter or V60

Cone filter grind is a medium-fine grind with a consistency similar to table salt, designed to optimize water flow and extraction in cone-shaped coffee makers, enhancing clarity and balanced flavor.

Flat Filter or Cold Brew

How fresh is your coffee?

Our coffee is roasted fresh to order and ships within 24 hours to ensure peak flavor. For optimal taste, we recommend brewing between 4 and 21 days after the roast date—this allows the coffee to degas and fully develop. After that window, it will still taste great for several weeks (or more), especially if stored in a cool, airtight container.
